Mexican Pork Cutlets with Avocado Salsa

  • 2 tablespoons Taco seasoning mix
  • 4 x 200g pork loin cutlets
  • 1 small avocado, chopped finely
  • 1 tablespoon lemon juice
  • 60ml olive oil
  • 3 small tomatoes, chopped
  • 1 cucumber, chopped finely

Preheat oven to 200°C . Combine seasoning, 2 tablespoons of the oil and pork in a large bowl. Cook pork in oven until browned and cooked.

Meanwhile, combine remaining oil in medium bowl with tomato, avocado, cucumber and lemon juice. Serve pork with salsa.
