Italian Meatballs (Microwave)

  • 125g pork mince
  • 125g beef mince
  • 1 egg
  • 50g crushed cream crackers
  • 25g grated Parmesan cheese
  • 1 clove garlic crushed or finely chopped
  • ½ tablespoon dried parsley
  • ½ teaspoon oregano
  • 1 teaspoon thyme leaves
  • ¼ teaspoon salt and a pinch of pepper
  • 225g tin of tomatoes chopped (topping)
  • 50g grated Parmesan cheese (topping)

Combine all ingredients except tinned tomatoes and 50g grated Parmesan cheese (toppings), in a mixing bowl. Shape into 12 meatballs. Arrange meatballs in a round baking dish. Microwave uncovered at High Power for 2 – 4 minutes or until meatballs are nearly done, rearranging them once.

Pour chopped tomatoes over meatballs and sprinkle with 50g grated Parmesan cheese. Cover. Microwave at High Power for ± 4 minutes or until heated through.
